Description
Fine grained limestone and a sheltered mid slope position set the conditions for the 2005 Domaine Dujac Clos Saint-Denis Grand Cru, a site whose natural balance has long informed the domaine’s approach. By this stage, the Seysses family had refined whole cluster use, careful pruning, and organic leaning farming in response to soil variation and vine age within the parcel, and the 2005 season provided clear conditions for observing how these choices aligned with the vineyard’s inherent composure. Harvest advanced through selective passes as tannin and seed maturity came into line. In the cellar, fermentation was carried out with varying proportions of whole clusters, guided by tasting and textural cues rather than fixed targets. Élevage followed in French oak selected through long running cooper relationships. This bottling extends Dujac’s record of how Clos Saint-Denis geology and gentle exposure can be articulated through expressive yet disciplined grand cru vinification.
