Description
Mid slope parcels on the southern side of Nuits-Saint-Georges supply the 2005 Jayer-Gilles Nuits-Saint-Georges Les Hauts Poirets, from a domaine founded by Robert Jayer and further developed under Gilles Jayer with a small scale, traditional Côte de Nuits orientation. Here, limestone rich soils interlayered with clay help moderate vigor and support a steady ripening pattern, setting clear parameters for canopy work and yield decisions. The vineyard is tended with careful hand labor, emphasizing close canopy management and moderate yields. Fermentation is carried out in stainless steel with a gentle extraction regime, followed by maturation in French oak selected to match the density of the vintage. This cuvée reflects the domaine’s intent to foreground individual lieux-dits through precise viticulture and measured cellar choices that follow the character of each harvest rather than enforcing stylistic uniformity across the range.
