Description
Drawn from the Gimonnet family’s oldest Chardonnay parcels in Cramant, Chouilly, and Cuis, the 2005 Pierre Gimonnet Champagne Millésime de Collection Vieilles Vignes magnum reflects deep chalk soils that provide effective drainage and sustain balanced vine growth during warm conditions. Many of these vines were planted before World War II, and farming is oriented toward soil preservation and careful canopy management to express the structural dimension associated with mature root systems. Fruit from the 2005 vintage was gently pressed and fermented in stainless steel, with each village vinified separately to retain site distinction prior to blending. Extended aging on the lees in magnum encourages slow development and cohesive integration. Within the Gimonnet cellar, this cuvée functions as a central reference point for examining old vine performance across Grand Cru and Premier Cru chalk and informs long term decisions around replanting strategies, reserve wine use, and parcel specific vinification.
