Description
Old vine Chardonnay from mid slope parcels in Cuis underpins the 2012 Dhondt-Grellet Champagne Extra Brut Premier Cru Les Nogers, drawn from vineyards rooted in pure chalk capped by thin, fast draining soils. Predominantly east and southeast facing, these sites receive gentle morning light and sustained airflow that supported a long, cool ripening cycle in 2012. Farming follows biodynamic principles, with low yields, precise canopy management, and hand harvesting carried out parcel by parcel to account for soil variation and vine age. Vinification proceeds with native yeasts in neutral barrels and enamel tanks, choices that balance structural precision with controlled oxygen exchange. Following tirage, the wine ages extensively on lees in the domaine’s chalk cellars before disgorgement at an Extra Brut level. Les Nogers occupies a central role in the range, articulating the chalk driven character of Cuis through detailed viticulture and restrained, patient maturation.
