Description
A network of Grand Cru and Premier Cru sites across the Montagne de Reims, Côte des Blancs, and Vallée de la Marne underpins 2012 Dom Pérignon Champagne Brut, assembled from parcels handled to preserve their individual character before blending. The season began with significant spring challenges, then shifted to warm, stable conditions that called for careful canopy management, strict yield control, and precise selection at harvest. Each parcel was pressed and fermented separately in stainless steel, allowing the team to document structural and aromatic differences as a basis for the final assemblage. Long lees aging in deep cellars followed, supporting integration and textural development over time. Within the Dom Pérignon project, 2012 functions as a pivotal study of resilience and precision in a demanding year, informing ongoing work on parcel segmentation, base wine evaluation, and the evolving understanding of how Grand Cru chalk responds to climatic variability.
