Grapes are drawn from cooler, higher elevation parcels on limestone and clay that temper ripening within a warm Mediterranean climate. Vineyard practice centers on hand cultivation, organic oriented treatments, and canopy alignment designed to protect clusters while maintaining airflow. Harvesting is manual and followed by gentle pressing to yield a lightly tinted must. Primary fermentation proceeds in stainless steel before bottling for secondary fermentation under the traditional method. Extended lees aging supports internal cohesion and reflects the estate’s commitment to long maturation before disgorgement.
