Description
A mid slope premier cru of limestone influenced clay soils supplies the 2015 Domaine Lucien Boillot et Fils Pommard 1er Cru Les Fremiers, a parcel tended by the Boillot family over generations and studied closely for soil depth, drainage channels, and vine age. These observations guide pruning, canopy density, and yield management, providing a framework for decisions in a warm, dry year that pushed ripening forward at a steady pace. Phenolic development was monitored block by block to shape a precise picking sequence. Fruit was harvested by hand and fermented in open top wooden vats, with extraction directed by frequent tasting and calibrated to the vintage’s naturally generous structure. Whole cluster use remained limited and was determined by stem lignification at harvest. Élevage followed in French oak barrels of varying ages chosen to integrate the wine without obscuring site detail. The cuvée supports the domaine’s ongoing effort to show how Pommard’s mid slope geology and long observed parcel behavior translate into premier cru structure.
