Description
Chalk rich subsoils capped by sandy loam define the single parcel behind the 2015 Francis Boulard et Fille Champagne Brut Nature Les Rachais, located in Cormicy to the north of Reims. Chardonnay here develops deep root systems that draw on steady mineral water supply, a factor closely monitored under the family’s biodynamic farming program. Vineyard work centers on detailed canopy adjustment, moderated yields, and hand harvesting aligned with biodynamic timing. Vinification is carried out parcel by parcel in neutral oak using native yeasts, with controlled oxygen exposure intended to preserve clarity while allowing the site’s chalk driven structure to emerge. Following tirage, the wine undergoes an extended period of lees aging in bottle before disgorgement without dosage. Les Rachais functions as a technical reference within the Boulard range, illustrating how biodynamic viticulture, long maturation, and single parcel focus intersect in a Brut Nature framework.
