Description
A three vineyard assembly defines the 2018 Paolo Scavino Barolo Carobric, produced by an estate founded in the early twentieth century in Castiglione Falletto and long recognized for detailed parcel work across Barolo. Fruit is drawn from Cannubi, Rocche dell’Annunziata, and Bric del Fiasc, vineyards distinguished by mixtures of Tortonian and Helvetian formations, differing clay and limestone content, and exposures that shape Nebbiolo’s ripening arc. Vineyard management emphasizes close canopy control, selective green harvest, and careful monitoring of vine stress across sites that vary in altitude and soil depth. Fermentation typically takes place in temperature controlled vessels with attentive cap management, followed by extended maturation in a mix of French oak barriques and larger casks chosen to align structural development across the components. Carobric holds a longstanding position in the Scavino range as a composite study of key vineyards, translating distinct geological and topographical profiles into a single Barolo through consistent, technically calibrated choices.
