From the Saar’s steep, slate dominated Scharzhofberger, the 2019 Bischöfliche Weingüter Trier Mosel Brut draws on a site defined by thin soils and cool exposures that favor slow ripening and tightly managed acidity. The estate, formed through the consolidation of holdings from multiple church institutions, is managed with an emphasis on maintaining classical vineyard traditions, and work in the vineyard relies on hand cultivation, erosion conscious soil care, and selective harvesting adapted to narrow terraces. The base wine is fermented in stainless steel, then taken through secondary fermentation in bottle, followed by an extended period on lees to build the structure associated with traditional method sparkling wines from the region. Within the range, this bottling operates as a technical extension, showing how a renowned still wine site is adapted to sparkling production while remaining consistent with the estate’s broader historical approach.
