Description
Recent stewardship has emphasized closer engagement with vineyard sources at Camille Giroud, a shift reflected in the 2019 Beaune Premier Cru Aux Cras. The site occupies a mid slope terrace south of Beaune, where thin calcareous soils mixed with marl and scattered stones promote rapid drainage and moderate vine vigor. South and southeast facing exposures support even ripening, with vineyard work carried out by hand and adjusted to the conditions of the vintage. Fruit is harvested manually, largely destemmed, and fermented in small vats, with extraction managed to align with the structural intent of the premier cru. Aging in French oak of mixed ages allows gradual integration while preserving site character. Aux Cras holds a central place within the maison’s Beaune range, articulating the stony hillside’s geological and climatic attributes through a measured, terroir attentive élevage.
