Description
Traditional farming and extended cellar work provide the framework for 2019 Domaine Confuron-Cotetidot Bourgogne Passetoutgrain AOC, produced by a long established Vosne-Romanée based family estate. The cuvée blends Pinot Noir and Gamay from Côte de Nuits vineyards rooted in limestone and clay marl, soils that balance drainage while keeping vigor in check. Parcels are tended largely by hand under sustainable principles, with canopy management and yield regulation adapted to a warm, even growing season. Grapes are harvested together and co fermented in keeping with the appellation’s historical model, with fermentation carried out in small vats and extraction held to a conservative level to respect the blend’s structural balance. Aging follows in older French oak over an extended period, consistent with the domaine’s long élevage approach. In the range, Passetoutgrain plays a defined role linking regional sourcing to traditional co fermentation and a deliberately restrained, continuity driven cellar regimen.
