Description
Higher elevation sites beneath Saint-Romain’s limestone cliffs shape the 2020 Maison de Montille Saint-Romain Blanc, produced within a house whose Côte de Beaune work is rooted in organic farming and precise parcel interpretation. Thin soils over fractured rock, combined with the appellation’s cooler, ventilated conditions, encourage measured ripening and a naturally firm structure in Chardonnay. Vineyard practice centers on careful shoot positioning, cover crop use, and minimal inputs suited to these upland slopes. Grapes are harvested by hand and pressed before fermentation in French oak barrels, with a restrained share of new wood chosen to support gradual development. Lees aging continues with limited stirring and regular tasting to keep the site’s inherent tension intact. Within the Maison de Montille range, this cuvée serves as a clear example of how the house approaches high altitude Chardonnay through attentive farming and a moderate, detail oriented cellar program.
