Across selected sites in the Côte d’Or, varied combinations of limestone and clay underpin the 2020 Bourgogne Aligoté from Remoissenet Père et Fils and inform the house long standing engagement with this traditional Burgundian variety. The viticultural approach favors controlled yields, attentive canopy management, and close parcel observation to moderate Aligoté’s naturally early ripening tendencies, particularly in warmer years. During the 2020 season, phenolic development was tracked carefully, with adjustments to leaf coverage and harvest sequencing made in response to differences in elevation and soil depth. Fruit was gently pressed and vinified using a combination of stainless steel and neutral oak, with native yeast fermentations employed when conditions allowed. Lees aging continued to build texture while preserving the mineral structure associated with limestone dominant sites. This cuvée contributes to the domaine’s ongoing effort to document how disciplined farming and restrained cellar decisions can position Aligoté as a serious regional expression within Burgundy.
