The 2020 Brut Nature 1948 Domaine Saint Just by Yves Lambert is drawn from organically farmed vineyards around Saint-Cyr-en-Bourg, where tuffeau and clay limestone dominate and provide a naturally firm acid profile well suited to sparkling bases. Since taking over, Lambert has tightened parcel selection for Crémant, focusing on canopy ventilation and yield control to hold freshness in warmer seasons. Sites intended for this cuvée are tracked closely for maturity calibrated to traditional method requirements, and fruit is harvested by hand to keep clusters intact. Pressing is gentle, and cool fermentations in stainless steel produce base wines built for extended development.
