Description
High on the Meursault slope, thin stony limestone over compact marl sets the conditions for the 2022 Domaine Matrot Meursault Les Chevalières, an upper site where limited water capacity shapes Chardonnay’s pace of ripening. Drawing on a lineage of detailed viticultural records, the Matrot family applies restrained yields, organic leaning practice, and early season canopy precision to manage this elevated parcel. During the warm, dry summer of 2022, vine growth and phenolic maturity were tracked closely, with leaf exposure adjusted to keep balance through the season. Grapes were harvested by hand and pressed gently before fermentation in a combination of neutral and lightly used French oak, with each lot monitored for textural and structural development. Lees élevage continued with minimal stirring to preserve the cuvée’s mineral driven profile. Les Chevalières contributes to Matrot’s longer record of how higher elevation Meursault parcels articulate Chardonnay through shallow limestone soils and carefully calibrated vineyard work.
