Description
From the hills south of Modena overlooking the Panaro valley, the 2022 Fattoria Moretto Lambrusco Grasparossa di Castelvetro Monovitigno is drawn from sloping sites between 150 and 300 meters where Grasparossa is rooted in clay rich soils with calcareous and silty components that hold water while supporting steady growth under Apennine influenced airflow. Organic farming guides the estate’s work, with all vineyard tasks carried out by hand and yields kept moderate through careful pruning and canopy management. Harvest is selective, and fermentation takes place in stainless steel with native yeasts before secondary fermentation in pressurized tank under the Charmat method, allowing close control over timing and integration. The monovitigno designation signals the intent to present a single variety expression. Within the producer’s range, this cuvée holds a central place, documenting Castelvetro’s hillside conditions through variety specific viticulture and a technically controlled, regionally grounded sparkling framework.
