Description
At the foot of the Massif de Chartreuse, Camille & Mathieu Apffel Pandæmonium 2023 is a Vin de Savoie Blanc Sec from Savoie, France, made entirely from Jacquère. Mathieu Apffel, originally from the Jura, began producing wine in Savoie in 2013, established his own domaine in 2017, and was joined by Camille Apffel in 2020. The estate is based in Saint-Baldoph, one of the communes linked to Apremont, with about 4.5 hectares farmed organically but not certified. Pandæmonium is reported from newer domaine vines, while the broader Jacquère holdings stand at roughly 250 to 350 meters, with southeast exposure, clay-limestone soils, and fragmented mica-schist and quartz from glacial deposits. Vineyard work is manual. The wine is vinified with low-input methods, with élevage described as 90 percent in tank and 10 percent in barrel, followed by bottling without filtration. The cuvée places Jacquère at the center of Apffel’s work on Savoie varieties, mountain viticulture, and restrained cellar practice.
