Description
Hillside vineyards in Limoux at roughly 300 to 500 meters set the context for NV Antech Limoux M Le Mauzac l’Ancestrale, sourced from parcels on clay limestone and mixed alluvial soils within one of France’s oldest documented sparkling wine regions. Cool Pyrenean winds slow ripening and help preserve the natural acidity needed for the ancestral method, and Mauzac is tended under sustainable practice with moderate yields, careful canopy balance, and selective picking suited to the variety’s later maturation. Fermentation begins in tank and finishes in bottle without dosage, retaining a small measure of natural residual sugar in keeping with méthode ancestrale style. A period on lees follows before a light disgorgement. Within the Antech range, M Le Mauzac functions as a technically focused example of Limoux tradition, shaped by elevation, Mauzac’s historical place in the region, and a restrained, heritage aligned cellar approach.
