Steady valley winds and chalk influenced drainage help moderate ripening, and vineyard decisions center on canopy balance, low yields, and hand harvesting calibrated to physiological maturity suited to a no dosage wine. Lots are kept separate through fermentation with native yeasts in stainless steel or neutral barrels, preserving parcel identity prior to blending. Secondary fermentation in bottle is followed by lees aging in the estate’s cool cellars, then disgorgement without dosage to maintain structural precision.
