Description
Sourced from Bizeljsko vineyards in eastern Slovenia, the NV Keltis Bizeljsko-Sremiški Mario Rozé reflects the Kelhar family’s natural-wine approach in a region defined by mixed marl, limestone, and clay soils under a continental climate. Organic cultivation, minimal tillage, and low yields form the base of the farming program, supporting balanced ripening across the estate’s hillside parcels. Vigor, canopy airflow, and phenolic maturity are followed closely through the season, with harvest carried out by hand in small lots. Depending on variety and ripeness, fruit is either gently pressed or given a short maceration before spontaneous fermentation in neutral vessels. Maturation proceeds without fining or filtration, consistent with the estate’s low-intervention intent. This bottling sits within Keltis’s broader effort to show how local varieties and mixed hillside soils can be translated through natural technique grounded in longstanding regional tradition.
