Description
Chalk and fine textured limestone parcels form the basis of NV Pascal Doquet Champagne Brut Blanc de Blancs Horizon, a key non vintage release shaped by Doquet’s transition from grower work in the Côte des Blancs into his own domaine program. Exposures that channel cool air and steady light support slow Chardonnay ripening, and the vineyards are farmed organically with soil management and canopy balance treated as central levers for consistency. In the cellar, lots are fermented separately in stainless steel or neutral barrels, then assembled with reserve wines to carry a stable profile across disgorgements. Secondary fermentation follows the traditional method, and lees aging is paced to develop structural depth while keeping the mineral driven frame of the base material intact. Horizon holds an important role in the lineup as a synthesis of multiple sites rendered through the estate’s farming discipline and blending philosophy.
