Description
High elevation parcels along the Langhe’s eastern ridge provide the source for the NV Rivetto Metodo Classico Dosaggio Zero Kaskal, produced at a Serralunga d’Alba estate that in recent decades has expanded its focus on organic and biodynamic principles. Sandstone and marl soils promote efficient drainage and measured vegetative growth, while shifting exposures and a cooler upland setting require close, hand executed monitoring of ripening through the season. Grapes are whole cluster pressed, and the base wine ferments in stainless steel and neutral barrels before tirage. Extended lees aging in bottle follows, with disgorgement carried out without dosage to preserve structural clarity. Kaskal fits within Rivetto’s broader exploration of sparkling production in the Langhe, using precise viticulture and a restrained cellar protocol to document these upland sites through the traditional method.
