Fruit comes from hillside vineyards planted to Corvina, Rondinella, and related local varieties on limestone- and basalt-influenced soils that limit vigor and support the slow drying process central to Amarone. Seasonal vineyard work emphasizes balanced canopies and low yields so berries can withstand the extended appassimento phase. Bunches are selected by hand and moved to traditional fruttai, where controlled air circulation guides dehydration over several months. Fermentation then proceeds slowly from the concentrated must, followed by aging in a combination of large casks and barriques to encourage structural integration.
