Description
Slopes and semi-slopes inland of Šibenik in Central Dalmatia provide the setting for the 2023 Ivica Piližota Dalmatian Coast Plavina, a varietal red built around the indigenous Plavina grape. Ivica Piližota farms a small estate with parcels ranging from roughly 50 to 300 meters above sea level, where red and brown topsoil, clay-rich stones, and a hard limestone base shape drainage and vine balance. Warm growing conditions are moderated by cooler nights and steady Adriatic breezes, supporting measured ripening without irrigation. Viticulture follows a practicing organic approach, with limited sulfur applications in spring and all fruit harvested by hand. Grapes are destemmed and fermented spontaneously in open stainless steel vats, with approximately twelve days of skin maceration. The wine is aged first in stainless steel, then moved to large used Slavonian oak before bottling. Within the Piližota range, Plavina serves as a direct expression of local Dalmatian grape material, guided by vineyard origin and a straightforward cellar approach instead of heavy élevage.
